Allow for changes to filtering to increase pattern output

The following variables can be tweaked in https://github.com/lanl/gs_patterns/blob/main/gs_patterns.h to "weaken" the filtering, which can potentially produce more pattern output for an application. These variables are currently defined at compile-time, but it would be nice to make these run-time parameters and share a simple example that demonstrates effects.

NTOP, OUTTHRESH, IWINDOW, USTRIDES, NSTRIDES

Have an option to print out which filters are active (first touch if a filter is triggered) as well as if symbol tracking is active. We have noticed that when symbol tracking is active, gs_pattern filters out more instructions, which impacts the final pattern.
